I have made this pizza twice this past week it is so good! I discovered the recipe from Eat, Live, Run on Pinterest and pinned it to my want-to-try board. I finally got around to it this past week for St. Paddy's Day. I figured this type of pizza would be good on a thin crust so I picked up a package of Udi's Pizza crusts, and away we went. Super easy! Use ricotta as your sauce, 2 shredded zucchini (squeeze out as much mosiutre as you can), some herbs, freshly minced garlic, and a little mozzarella. Pop it in the oven and 15 minutes later, you should not feel guilty about eating half or whole pizza.
