Salads don't have to be all about the lettuce. This week I decided to get crafty with my "salad" and make up something with some delicious avocados.
I peeled and cubed up 1 cucumber, diced 2 tomatoes, cubed 2 avocados, and combined it with 1 drained can of black beans. Then I added some fresh cilantro that I got from my herb girls at farmer's market, a little lime or lemon juice, slat, pepper, and garlic, and you are good to go. This would be great for a picnic, or a side with some grilled meat, but since it does have the beans and avocado, it will be my main dish for lunch this week.
